A versatile and heavy-cropping variety, ‘Matador’ is a classic true spinach with deep green, fleshy leaves and a superb texture. Its excellent bolt resistance allows for an extended harvesting window even during warmer months when other varieties might struggle.
Its fast-growing habit makes it the ideal candidate for successional sowing to ensure a fresh supply year-round. Matador is a fantastic dual-purpose crop: harvest early for tender baby salad leaves, or allow to fully mature for a delicious, iron-rich steamed side dish.

For best results start in seed tray or modules March – September although can be sown direct 2 cm deep. When large enough to handle plant out with 15 cm spacing in rows 30 cm apart. Water well in dry weather to avoid premature bolting. Sow monthly for successional harvests 6 weeks after sowing.
